Vegetable Canning Safety

It's always good to remember that vegetable-processing times should be followed exactly to ensure that your home-canned veggies (or other foods) are safe to eat.

If you find that your canned vegetables are frothing or foaming when you open them, or if they have an odor, do not taste them. Destroy or bury the contents where they won't be found by anyone, especially children and animals. Wash the jars and rings in hot soapy water, and immediately sterilize them in boiling water before storing or reusing them.
