Winter Is the Time of Slow Growth

One important thing to remember about winter gardening is that plants don't grow very fast when the days are short and the weather's cold.

Plant more than it seems you need of cut-and-come-again plants, which won't regrow harvested leaves quickly, and plant early to allow other crops to mature in time for a winter harvest. This may mean getting a start in summer, especially if you grow your winter crops from seed, but the payoff will be worth the preparation.

This lettuce may look overcrowded in fall, but it will allow me to harvest leaves all winter without killing the plants.
