Herbs in Winter

Herbs can be a important part of your winter garden, lending plenty of flavor to the dishes you make with your winter veggies.

Some summer herbs, such as parsley and mint, will survive the freezing weather with just a bit of protection. Others, such as saffron, produce only in the fall, adding color to a garden that is otherwise green and brown and a rich flavor to winter soups and rice. In southern zones, rosemary will keep producing all year, and its strong, savory flavor is the perfect complement to the hearty foods we crave in cold weather, such as potatoes and winter squash.
