I found this plant near a creek on my property and transplanted a number of them to my yard. The elephant ear type leaves have mostly died back, but I did get a picture of the flower. Anyone know what it is?

It certainly looks like a Colocasia@texaskitty111. When the leaves grow back we might even be able to tell which one. Beautiful inflorescence and lucky you to have found them.

Maybe!! Then you'd need to roast barbeque something to go with it.
Although likely, it may not be a C. esculenta variety from which poi is made. Other Colocasia species also have blooms that look like the ones in your photo.
Another "Elephant Ear" found in Texas is one that is considered invasive here in Florida: I find this one difficult to keep under control as it spreads by underground rhizomes. http://plants.usda.gov/core/pr...

I would guess it probably is invasive as it's washed down my creek, and within a few years, spread along both banks. My animals don't eat it, so it must not taste good. I put it where it can spread it it wants to. I like it a lot. It doesn't have leaves as big as a person like some pictures online, but they are huge.
Gosh texaskitty, your vine looks a lot like some of the wisteria vines I have been clearing out...some are really big around and have wrapped around the cedars, but you should see and or smell the blooms.
Each cloud has a silver lineing if only you look for it.

TK, if you try your elephant ears in shade (and they are the kind capable of it,) you should get larger leaves. In the sun, they just can't/won't get as big (or it takes more than a few years, when I moved mine.)
