Treehugger, they are used across the board in Chinese cooking. I just eat them by themselves, cooked.
The problem is that when you are young your life it is ruined by your parents. When you are older it is ruined by your children.

I've heard they are best peeled and eaten raw. I'm trying to find some way to use them and not take away from their sweet, crunchy flavor. Oh! by the way I love your country.
