This plant was my grandfathers years ago, and was given to me by a family friend about a year and a half ago. It grows in a vase with water and very healthy roots. It looks like lucky bamboo/dracaena braunii, but the woody stem is concealed to me by roots and stones.

The leaves grow in a similar fashion, but I wanted to make sure as the very pretty stems grow out with the narrow leaves on the end. My other bamboos are still pretty young, so I wasn't sure if they were the same, or just similar. Any help would be wonderful thank you!

Not a true Bamboo, which is a type of grass. More closely related to Agave.

I agree that your plant is Dracaena braunii, you can read more about it and see photos for comparison here in our plant database: Lucky Bamboo (Dracaena sanderiana)

Awesome! Thank you! I figured, but most I see seem to grow in the stem with age, and not just the leaves. Maybe that's a result of the stem being completely underwater, rather than sticking out? Either way, it's a pretty happy guy, and a beautiful centerpiece to our table! Thank you guys!
