Hello all,
In discussing tomatoes, foods and cooking in other forums, I am on a quest to process fresh tomato sauce, but mostly "pasta" sauce which can be derived from that tomato sauce.

Now @tveguy3 mentioned his Kitchen Aid mixer and an attachment for the straining of tomato seeds. In reading up on this, I read one post online outside of ATP where the person thought the KitchenAid with attachment splashed too much ??

I currently have a crank food mill, but think I might like to dive into something easier and/or better. Especially if I find that I want to freeze or can a lot of these tomato products, sauce, etc.

Here's a link with a few processors/food mills: http://pleasanthillgrain.com/a...

Has anyone used the Victorio Food Strainer? They list several attachment type strainers and well as attachment for it to become electric powered. Looks like something I might like to try.

Please tell me what all you have tried and what was/is your likes and dislikes. Thanks!

Also, I might add, I'm short of counter space as well as storage space, though I'd love to have a KitchenAid Mixer.

If it's splashing too much then it may be running at too high a speed. I also set my bowl to collect the juice on a block so that the juice doesn't have to fall very far.

I love my KitchenAid. And all the attachments I have for it. Looks like the strainer is an attachment to the grinder attachment? That's one I don't have, although I love the grinder. My only complaint with it is that the plates are either too big or too small. However, I was able to find some in-between sizes from an after-market mfr and they work just fine. And, I agree, it may be that the splashing could be caused by running at too high a speed. Easy enough to do with a KitchenAid.

Well, I found out that my mom has a KitchenAid and I didn't even know it. At 74 she finally retired from her bank teller job and it's been very nice because we work together on making stuff. I grow, pick, wash and strain grapes and she makes the jelly. Same with red raspberry jelly. Mmmm, just so much better than store bought. We're already trying to figure out the strainer attachment to perhaps add that to hers and we'll work together on the tomato sauces. So now, I've decided I don't need to purchase anything.

But perhaps someone else might be interested in the same thing, so hopefully some will post their types and comments. Thanks again.

I'm not sure which model my mom has, but I'm guessing it's the one with the least amount of power. She purchased it to (maiinly) grind meat, and she has been disappointed in that aspect because she says it just wants to bog down real bad.

If it's any help, I have the KSM90 "Ultra Power" that I bought about 30 years ago. It's the type where the head tilts back to lift the beater. I think there was an earlier model of the same kind, but with somewhat less power. That may be what your Mom has. Mine works fine with the grinder attachment, but you do have to feed it small chunks gradually, or it will bog down. And of course, the size of the holes in the plate make a difference, too. I generally do a coarse grind first, then run it back through the smaller plate.

@woofie Thanks for that info. I'll share that with my mom. But actually, she just bought hers she said about 3 years ago. That was about one year before she retired. So hers has to be a newer model. When I got to talking to her about one, she said "I can't believe you've never seen that on my counter". I guess I just never pay attention, or didn't really think about it until now.

You can also get after-market grinder plates with different hole sizes than the stock ones. I bought one with larger holes for doing the initial grind for making hamburger. Here's one source, although I think I got mine for a bit less somewhere else. And Amazon has a set that includes a new cutter blade, too.

@gardengus I hear you about the muscle. Sad not an option for me. I've been canning beef and chicken. Also canned some potatoes cubed for soups. My mom had purchased about 6 bags of homemade noodles from the ladies groups that make them, and shared with me. I told her that as much as I'm enjoying the ease of opening a jar of my own broth, whether beef or chicken, and making up some either quick chicken and noodles, or beef and noodles; I think I'm going to want more noodles because I was doing all this now for the summer busy time and easy things to quickly fix and eat. Our noodles may soon be gone. So hopefully we are going to put her KitchenAid into good use making our own noodles. She doesn't have the attachment to use for tomatoes (yet), but she does have the one to make noodles.

@gardengus That's interesting, I had not thought of it, canning turkey. I've been trying to get chicken on sale. For the chicken I like to have legs and thighs for fatty type to make good broth. I cook mostly to done with lots of water, carrots, celery, onions in large pieces for extra flavor. I throw in 3 or 4 large breasts at the end until it's almost done. I canned half pint jars of all white meat so I could make chicken salad in summer. I canned mixed white/dark meat for use in my chicken and noodles. But as for turkey, I don't really have a lot of uses for canned turkey. My ex (many moons ago), made turkey jerky; now that's pretty good. We had a dehydrator though to make it in and with the purchase of the dehydrator came a lot of recipes, or how to. Have you ever made turkey jerky? I wonder how long it keeps?. That always got eaten fast ... it was made from leftover thanksgiving turkey.

Side note: I don't know how to cut up whole chicken, and I like to can probably more of the breast meat by itself than the dark/white mix.
