Mine are so tall and have huge heads and now they are dropping over before ripe and I am wondering if I take them off and lay them up somewhere if they will ripen?

I'm not sure if they will once they're cut. I've tried it before but the birds always beat me to the seeds!

Now I just tie the stalks to a post or fence to keep them upright and cover the seed heads until they're ready.
