We thought we should share some recipes on one thread so we can find them when we want them. Maybe starting with favorite Christmas or Hanukah favorites that bring back family memories and comfort. One for me is the recipe for peppernuts. I couldn't find the recipe my mother used to make, I'm waiting for my sister to see if she has it, but I do have a good one from a friends family that I like a lot and will share.

Dark Peppernuts
1 Pint jar of Dark Karo Syrup
2 T molasses
1 Cup Lard or Crisco
1 Cup dark Brown Sugar Packed solid
1 t Soda
15 t Anise seed (grind it in a blender) more if you like this flavor.
1/2 t Salt
1 Cup Walnuts chopped fine
5 Cups flour

Mix together and roll the dough into tubes about 1/2 inch in diamiter.
Wrap in wax paper and Refrigerate overnight.

To Bake, take out a roll of dough, flatten it with your hands on a cutting board and cut diagonally into diamond shapes. Place on cookie sheet and bake at 350 degrees until lightly browned. Let cool and enjoy. It's fun to through a handfull of these into your coffee and let them soften. They are a hard and chewie cookie.

This is really great, Tom. We started something just like this on one of my baking blogs, and it was a major hit. We had tons of wonderful recipes that everyone shared-enough to publish a book one of these days. I had a dinner party tonight so couldn't post but will do it tomorrow. I hope that all the great people here will post their favorite recipes here also, and maybe we will have a possible book here also!!!

Recipe From Karen's Kitchen

CHRISTMAS BRUNCH EGGS

Dried/chipped beef sauce:
1/2 lb. dried/chipped beef shaved(sliced paper thin)
1/4 c. butter
1/2 c. flour
4 c. milk (skim or whole)
Pepper to taste

Melt butter in large fry pan. Sprinkle in flour and pepper, and cook (will be very thick) until a light golden brown. Slowly stir in the milk with a whisk, and cook over medium heat until thick and smooth. Set aside while cooking the egg portion of this dish.

Eggs:
20 whole eggs
2 1/2 - 3 tsps. salt
1 c. evaporated milk
3 Tbs. butter
1 whole large red tomato
Combine eggs, salt, and milk in large bowl and beat or whisk until well combined and smooth.
Melt butter in large fry pan and cook as you would scrambled eggs that are just barely done.
Spray a glass 9 x 13 pan with a butter spray, and alternately layer the scrambled eggs and the dried beef sauce starting with the beef sauce. Thinly slice the tomato and lay them the long way on top of the egg mixture overlapping just a little. Sprinkle with a little parmesan cheese if desired.
Bake in 350 oven for 1 to 1 1/2 hours covered for the first 1/2 hour. Serves 10 to 12
***This can be made the day before and kept in the refrigerator. Remove from the refrigerator for 2 hours before baking, or extend baking time.

GRANDPA'S CHRISTMAS DIP

1 lb. hamburger
1/2 c. finely chopped green pepper
1/2 c. finely chopped onion
1 6 oz. can tomato paste
1 c. water
4 oz. cream cheese
1 envelope Ortega Taco Seasoning
Nacho Cheese Chips

Brown hamburger in large saucepan, and add all remaining ingredients except chips. Stir until all is blended and heated throught. Serve with Nacho chips.

***This recipe freezes very well but don't plan on having any leftovers. This is my husband's all time favorite dip, and the grandkids always make sure that someone brings this on Christmas for "Grandpa".

BLACK WALNUT COOKIES

1 c. butter, softened
1 c. sugar
1 c. firmly packed brown sugar
2 eggs
3 c. all purpose flour
1/2 tsp. baking soda
1 tsp. salt
1 c. black walnuts, chopped

Cream butter and sugars together. Add eggs and beat until smooth. Combine flour, salt, and soda, and add to creamed mixture until well blended. Stir in nuts and divide into 3 equal balls. Shape each ball into a log on a piece of waxed paper. The logs should be about the size of a fifty cent piece and apprx. 12 inches long. Wrap the logs in the waxed paper and refrigerate for 4 hours or overnight. Slice 1/4 inch thick and place on parchment lined baking sheets leaving a good inch between as they spread some.
Bake in a 375 oven for 10 - 12 minutes or until lightly browned.

***These are delicious as is, but for a real treat, dip half of the cookie in melted chocolate and sprinkle with chocolate jimmies. Enjoy!!!!

FABULOUS FRITO SNACK MIX

1 10 oz. bag of Fritos
3 - 4 c. Chex Cereal
1 c. small pretzels ( i use the balls or pillows)
1 1/2 c. whole nuts of your choice
1 c. mini or regular M & M's, optional
1 c. packed, light brown sugar
1/2 c. butter
1/2 c. light corn syrup

Heat oven to 350 degrees
In a large bowl combine the Fritos, Chex, pretzels and nuts. Set aside.
In a small saucepan combine the sugar, butter and corn syrup and melt over medium heat. Let the mixture come to a boil while stirring, and then boil over medium for 4 minutes without stirring. This should be a "just boiling" and not a hard boil.
Remove from heat and pour over cereal mixture stirring to coat evenly. Transfer to a large roaster pan and bake for 8 minutes. Remove and stir well and return to oven for another 8 minutes.
Tape a large piece of parchment paper to the countertop, and pour the cereal on this to cool. Stir and break up any large clumps as it cools. Once it is cold, it is hard to do this without making a mess of the cereal. Store in airtight container.

***When I first read this, I didn't think that a Frito mix would be very good, but it is a favorite of everyone who receives a bag.

SPICED CHRISTMAS NUTS

1 egg white
1 Tbs. water
1 lb. whole shelled chashews
1 lb. dry roasted or virginia peanuts
1/3 c. granulated sugar
1 rounded Tbs. anjou chili powder
2 rounded tsp. ground cumin
1/2 tsp. cayenne pepper or more to your liking

Whisk the egg white and water until very frothy in a large bowl. Add the nuts and stir until well coated and the egg white is thoroughly coating the nuts. In a small bowl combine sugar and spices. Stir into nuts until all are well coated. Spray a large cookie sheet lightly with butter spray and arrange nuts on this in a single layer.
Bake in 250 oven, uncovered, for 1 1/4 hours, stirring once. Cool completely and store in airtight container.

***I bet you can't eat just one!!!! This recipe calls for 2 tsp. of salt which I never think is necessary. If you have a Fleet Farm in your area, it is the best place to buy nuts.

Karen, I do pecan halves the same way as the "spiced nuts," only using cinnamon instead of the spices in your recipe; LOVE the idea of the chili spices ! (and thanks for the heads up about Fleet Farm, we're going to Green Bay on Monday for a doctor's appt, maybe if it doesn't look too crazy at FF I'll stop and get some nuts while we're there!) Sandy, We have Farm and Fleet in the Southern Part of the state. We had Fleet Farms in the Northern part of the state where I grew up. Although they have nuts and things like that, they never beat the prices at our wonderful Woodman's Grocery store. I think there may be a Woodman's in Greenbay, though I'm not sure. They are employee owned, and they beat the prices of everyone around here. You might be able to do a search an find out if and where it is. It would be worth you're while! Well, I just did a search, and sure enough there is one there in Green bay. Here's a link.

SHELBY'S PAYDAY
(tastes similar to the Payday candybar)

10 cups Rice Chex
1 cup peanuts (dry roasted works well)
1 cup sugar
1 cup white Karo syrup
1 cup Peanut Butter
1 teaspoon vanilla

Have Rice Chex and peanuts measured out stirred together in large bowl. Have peanut butter and vanilla previously measured out and ready as well. Also have ready a large cookie sheet which can be covered with wax paper for less mess.

In medium saucepan, combine sugar and Karo. Over medium to high heat, bring to a boil, and remove from heat. Quickly add peanut butter and the vanilla and stir to mix. Once mixed, quickly pour over the Chex/peanut mix, and stir to coat. Then pour (scoup) onto cookie sheet to fully set. Once set, may be broken into smaller pieces.

I say quickly, because the cooked mix tends to want to set up quickly, and then it becomes difficult to get the Chex/peanut mix coated thoroughly.

Karen, all of yours sound real good as well.

I'm hoping in our little town that the low-dollar grocery (who carry mostly off-brand) will carry the Chex brand cereal. They are more than $5 per box at the other small grocer.

We are so fortunate to have a new Aldi's near us, and we can price match anything at Walmart. My Chex Cereal was $2.00 a box. I usually save anywhere between $20 and $50 per week, and more at holiday time.
