Becky's PUERTO VALLARTA SALSA


Very healthy and very yummy!
I use a food processor to make my salsa that I have adapted from a recipe I received while on a cruise in Puerto Viarta. I add the ingredients to a huge bowl as they come from the food processor. Chilling this over night brings out the best flavor but it’s rare that we don’t start eating it within an hour. The second day the salsa is even better as the flavors combine. This is a chunky style pico di gallo salsa but if you prefer a soupy one, just puree everything!

16 Roma tomatoes, diced

4 tomatillos, diced

3-4 cups of purslane leaves and new stems, diced

4 green chiles, diced

2 yellow and 2 red bell peppers, diced

1 white or purple onion, diced

1 bunch of green onions, diced

2 to 4 jalapeños, diced fine (I like my salsa hot)

1 bunch of fresh cilantro, diced fine

The juice of 2 limes

2 garlic cloves, diced fine or garlic powder to taste.

Lawry’s season salt, to taste

2 habanera peppers. If you are what we call a "wimp" with your salsa, leave out the jalapeños I am not a measuring type cook: I simply dice, chop and mix. So forgive the lack of clear and concise instructions. Every time I make salsa it turns out differently.When purslane is not in season, I omit it but this year I plan to grow enough and freeze for salsa making.

Tabby,
You can add it to omelets and to soups but I like it fresh. You can chop it up and use it on a garnish on baked potatoes.....or really, garnish on everything. It's full of good vitamins and nutrients!

Hi Rene,
The wild purslane has a little bit of a tangier taste that the ornamental. Some say lemony. I think it's all different. I add it to everything I can even through the taste isn't powerful on the ornamental. It's so healthy for us. The texture is firm on the stems. When mixed in salads, you aren't really aware of it.

I just added it to a quiche a few minutes ago. I let you know how it turns out.

I was weeding the daylily bed and pulled up a couple of large, succulent, very tender purslane plants. They don't have much taste, but are very very tender, even though are are blooming their tiny little yellow flowers. I was going to make a broccoli zuchinni cheddar garlic quiche anyway, so I threw the leaves in with the other veggies. .

I've noticed sometimes that they are strong or mild too. But the vitamins and minerals are there so I add them!

I added all the leaves from two large plants into the quiche and I couldn't taste difference. It certainly did't hurt.

I just found this:

Purslane is one of five herbs which counter depression. It is one of the only plant sources of Omega3. . . A 100g serving - approx 1/2 cup - contains 400g! One cup provides 2000mg of Calcium! 450mg of Magnesium! 8000 mg Potassium! All your Vitamin E! Snip the tender tips of this nutrient loaded, mild tasting plant and add it to your salad. Use the thicker bits as an addition to soups or stir fry. Fill a jar with 2 inch pieces of FRESH Purslane. Completely cover with room temperature Organic Apple Cider Vinegar, leaving a little space at the top. DO NOT USE A METAL LID. IT WILL CORRODE! Leave the jar for 6 weeks before using this mineral rich vinegar on salads. You can also enjoy the Pickled Purslane (say that ten times fast!). It'll stay good up to a year. Enjoy!

How interesting.
I have a good stand of purslane in my garden, (despite none of my seed that I bought sprouting.)
The current wild crop here tastes pretty neutral. Kind of like green beans texture with spinach flavor notes...
I had Goldgelber in the past and did not care for the lemony taste, straight in the garden anyway. Would work well in soup I think!
