The easiest seed I ever collected and cleaned was 'Pacific Giant'
Delphinium elatum from Botanical Interests. That flower spike matured in mid-summer when I had no rain or wind, so the flowers went brown like tiny pitchers or deep cups. The seeds matured and dried in those pitchers.
When I could hear them rattle when I tapped the flower spike, I put a big carboard box under and to one side of the plants to catch any spills. Then I cut the spikes (gently), one at a time, and tipped them over, into the box. The ripe seeds fell out of the "pitchers" and into the box: dry, ripe and clean.
