Pests are so regional that out-of-our-area pests are difficult to diagnose. Go out at night with a flashlight and look for the culprits. From you description it could be many, many different pest species.

Kermit gave some good advice. One pest that came to mind is earwigs and they do most of their damage (feeding) at night and hide during the day.
