Strange to see someone selling "microgreens" as rooted plants, in a six-pack.
Micro-greens are typically eaten very young, with just 1-2 pairs of true leaves, or even at the cotyledon stage. Like, 1-2 inches tall at most. I thought they were always densely scatter-sowed and then harvested with scissors soon after emergence.
You could collect the seeds and then sow more "microgreens", densely ... and harvest and eat them before they get to the size they were sold at.
