I picked up a 6 pack of micro greens at a local nursery and transplanted them to a couple window boxes. They have only been there for approx 1 week and one of the greens in the mix is bolting in most of the (pix attached). We did not had hot weather during that time so I was surprised to see that. Is this typical of micro greens? Should I just keep pruning off the flower spikes or are these things too much trouble for their small size?

They do bolt quickly with incresing light hours. Most likely They had been sitting in transit too long. I have seen nurseries actually selling bolting plants.

Strange to see someone selling "microgreens" as rooted plants, in a six-pack.

Micro-greens are typically eaten very young, with just 1-2 pairs of true leaves, or even at the cotyledon stage. Like, 1-2 inches tall at most. I thought they were always densely scatter-sowed and then harvested with scissors soon after emergence.

You could collect the seeds and then sow more "microgreens", densely ... and harvest and eat them before they get to the size they were sold at.

That's what I was thinking... they're really just one step beyond "sprouts." Something anyone can easily grow from seed... I can't believe they sell them in packs!

i had thought about that too. and i think it must be correct. so i will grow them out to seed and will re-seed
