Hi, everyone.

I'm so glad so many people are chiming in. This thread seems to be gaining in popularity. I'm glad it's going well. Nothing is more depressing than keeping a thread "alive" by yourself. Nothing of great portent is ever discussed by me. This is a very informal place. Nothing is ever off topic because there is no topic. We don't sweat the small stuff. Feel free to join in the conversation.

I won't be writing daily while I'm on a cruise in December, but you'll get travel stories and pictures when I return, I promise.

I took pictures of Lucy climbing on her jungle gym this morning. The sun was behind her, I had to use the flash, but I did it. After working on the pictures, I realized that the windows of her vivarium are dirty. That happens when she fall off the jungle gym and lands in her water bowl. I'll get around to sprucing the place some day. Here is a picture. She was also positioned right under her red heat lamp, so there is a tinge of red in there I did not correct, lest I turn everything else off-color. Her jungle gym is made of white PVC pipes. She uses it a lot. Exercise is good for her. Notice how the tail is hanging on to the pipes as she climbs. Sometimes, she slips off a pipe, falls into the water bowl, but the tail remains curled around one of the pipes.

Caramel recipe, eh? Here goes.

CARAMEL SPREAD RECIPE

YIELD : roughly 8 jelly jars (8 oz each)
DIFFICULTY LEVEL : EASY
COST PER JAR: MINIMAL
NUTRITION FACTS: Don’t even ask; just look at the ingredients list.

BEFORE YOU START: sterilize your jelly jars and prepare their lids in a bath of hot water. There will be no time to do that once the caramel is cooked. Be prepared.

INGREDIENTS
6 cups brown sugar
2 ¼ cups light corn syrup
2 tablespoons molasses
¾ pound salted butter
1 1/8 cups cold water
1 1/2 cans Eagle Brand sweetened condensed milk

PREPARATION
A) In a large pot with a heavy bottom, mix the corn syrup, brown sugar, molasses and butter.
B) Heat on high heat until the mixture boils, stirring often. Be careful, sugar syrup may splatter and burn you badly.
C) Reduce the heat to almost minimum and continue boiling during 9 minutes, stirring from time to time.
D) Remove from heat.
E) Add the cold water in 3 additions, stirring with a whisk between each addition. The first addition may splatter a bit. Be cautious.
F) Add the sweetened condensed milk and incorporate it into the caramel using a whisk.
G) Pour the caramel in sterilized 8 ounce jelly jars.
H) Clean the jar's lip with a damp cloth before applying the lid to ensure a good seal.
I) Apply the lid and finger-tighten, following manufacturers’ directions for the jars you are using.

NOTE: In its sealed jar, the caramel spread will keep a long time at room temperature. Once opened, the jar must be stored in the refrigerator. Leftovers won't linger long in the fridge. Hint: one of my friends dips pretzel sticks into the cold caramel spread, lets the excess drip off and dips the whole thing in dark chocolate: sinful.

WARNING: this recipe produces a very addictive substance. Consume with caution. You have been warned.
