Rita, one salad I really enjoy is taking a mild onion (shallot if possible) and dice it. Add diagonal cut snow peas or sugar pod peas. Then, add slivers of fresh carrot, or bigger pieces ( might want to blanch first or microwave for a minute or two). Add a simple vinaigrette or Italian dressing. Let sit in fridge for a couple hours and enjoy! Also great to swap peas for fresh asparagus. It is so good with the peas, carrots and shallots (or onions)...
