If you try to dent the skin with your fingernail and it resists or seems hard, the fruit is ripe. Determining ripeness in Delicatas is a bit more challenging than other types like Butternuts or Acorns though, because the skin of Delicatas relatively thin, so it's often more difficult to determine what "hard" skin feels like.

If in doubt, you can always wait a few more days. In general, they won't spoil unless they've been damaged or they get frozen.
