You can regrow celery from store bought all winter long. I do it at school. Cut the bottom portion of the celery so you have about 1-2 inches of just the base. Place in water and under lights. It grows like crazy. Change the water frequently. Once the celery regrows about six inches you cut if off and start over again. Occasionally you will get one that just won't regrow and goes mushy. The regrown celery tastes so fresh, love to use it as a garnish on salads as it's extra tender and leafy. I did bring a few rooted regrown celery home for my garden last year and they got huge and I had to keep piling dirt and compost around them so I could blanch the stems.
Never heard of red celery.
