When the fruit gets ripe (dents to a light touch) drop it in scalding water for 20 seconds, remove it to cool water, then it is easy to peel.
It is good in salsas.
Diced with cilantro, lemon juice, onion, garlic, chili, paprika, cumin, oregano, salt. Mix all ingredients together and let sit for a few hours, then it's ready to serve.
