I am also gluten free! For some weird reason, my body doesn't react to panko crumbs the way it does regular crackers. You could maybe use some crackers such as the Blue Diamond Nut Thins made of rice and pecans, or one of the other flavors.
You need the crunchiness of the almonds, or else the texture is off. It's almost like it's too jammy?
Next time I make it, I'm going to try using raspberries instead of strawberries.
I would like to hear back from people if they do prepare this in a different way.
