This parsley has broad, flat leaves with a sweet taste. It prefers growing in cooler weather.

Italian Parsley is good in soups and stews and on fish and meats. It adds color and even dried Italian parsley retains the bright green color.

Host plant for the Black Swallowtail Butterfly (BST). Even if stripped by the caterpillars, the plant will generally return and produce continued growtht after the cats have left. Drought tolerant.

The Italian salad that utilizes the MOST amount of parsley is roasted parsnip with pecorino cheese and as much parsley as you can handle (tip: pretend it's arugula ;).
The Mediterranean salad that utilizes the MOST parsley is Lebanese tabbouleh, which uses a small amount of bulgur and gargantuan amounts of parsley.
    Both are favorites of mine.
