    Papalo is a great substitute for cilantro after cilantro has bolted or died out in the summer heat. I prefer to use it to season salsas, removing the papalo without eating it. I personally find it bitter eating, but the oils in the leaves have a good cilantro flavor and aroma and are readily released.
