Salvia Plumosa is my favorite salvia. It is totally hardy here in zone three, and the color is a beautiful deep purple. It maintains that color in both dried and fresh arrangements. It does have a tendency to get lanky and needs some support. I usually cut it off and dry it before it starts going to seed and it sends up new blooms so it blooms most of the summer.
