Unlike canning and other ways of preserving food, freeze drying causes very little damage to the nutritional value of your food. Freeze-dried foods retain around 97% of the nutrients, dehydrated 60%, and canned 40%, and the shelf life is far beyond canned, frozen and dehydrated foods. The food also retains it's original look and texture once rehydrated.
