I have read to not cut them off when they go dormant because often times they will live and rebloom in the spring.
A single inflo can produce multiple blooms and can continue to bloom for a few weeks to a few months but once the inflo falls off it doesn't rebloom. I don't cut off the inflo (just in case it will produce a seedpod) I just let it fall off naturally. Once the inflo falls off, the tip may develop new inflo or the top eill develops new branches then it will spend its energy with growing the new branches. Sometimes one blooming tip can produce 3 new tips and the cycle continues.
