I have found it does not make a difference with the plant health whether you deadhead or not, if you leave the seed head on you have the possibility of getting more plants, mine freely seed through out the yard.
If you want to deadhead, which will clean up the looks of the plants wait until the seed heads look like this, then just pop them off with your fingers.
