Micro-Greens Pie Planting Recipe

Fresh greens are easy to start from seed and are quick to germinate. Enjoy the bold taste of micro-greens within 1 to 2 weeks

2 cups potting soil
¼ cup water
1 handful of Arugula (Roquette) seeds or other edible herb seeds
¼ cup moist Vermiculite

Method

Prepare aluminum loaf pan (poke several small drain holes in bottom)
In a separate bowl, fold together potting soil and water
Let stand for 10 minutes
Put soil in prepared loaf pan and pat lightly
Gently sprinkle seeds on top of soil mix
Top evenly with a thin layer of moist vermiculite
Cover pie with a clear plastic lid
Place under lights or near a sunny window
For quicker germination, heat pie for 48 hours on a seed starting heat mat
Mist daily with a strong brew of room temperature Chamomile tea (prevents damping off)

Once sprouted with the first set of leaves, trim and serve with your favorite dressing.
Enjoy fresh micro-greens.

Some suitable micro-greens would be:
Amaranth, arugula, basil, beet, broccoli, cabbage, celery, chard, cilantro, cress, endive, mustard, pak choi, Tokyo bekana, pea, and radish.
Once trimmed of the cotyledons, the seedlings will not grow back.

update: I now use an aluminum loaf pan instead of a pie plate. The loaf pans are much deeper and fit better on a water tray
