My uncle showed me years ago how to crack Black Walnuts to get bigger pieces for your favorite recipes. Place the sharp point down on a rock and hit firmly with hammer until it splits. Usually cracks in half, remove the loose meat pieces then continue to crack the other pieces on the point. I drop the broken nuts in a colander and gently toss to help remove debris and small shards of shell. Next I dump nuts on an old dish towel and pick out the big goodies. (It's easier to see bits of shell) Of course you will still have to pick out what doesn't fall out, but oh those big meats are wonderful in fudge or Banana Bread. Extra meats can be frozen for next time.
