They look like blooms but wait a little longer. That's when I would dig a little into the center with my fingers and look to see if the leaves are just continuing inward (maybe an offset) or if there's a firm round bloom head.

I vote for offsets too (only because that's what I want :P), but if it's blooms that means 3 more snips and the cycle continues!
So often when I do this "bloom lopping" thing the offsets create twins or crests! Love that part of this!!!

the rosettes (there are at least 2 of them) are beginning to get roots near the base of the stem, so I'm thinking the stem will die back once rains begin here, and I'll plant the rosettes then! Just a guess based on what I've seen happen with other's on ATP
