I could use some help. My 5-6 day defrost turkey defrosted overnight, so I cooked it today, if nothing else I can use that good juice. I would like to be able to supplement on thursday with some of the meat, but have no idea how I would keep it and then get it back up to speed.

Also, I have to make a large amount of sweet potato casserole and it would take me many many pans over boiling them as I usually do. Do you think I could bake them and the texture would work?

Thanks, I must say that early turkey smells heavenly.

My GF cooks her Turkey ahead of time, slices it up, tops it with gravy then covers the pan until used a couple days later. Shes even frozen it before the big day and simply reheats it in the oven.

We bake sweet potatoes all.the time. They turn out wonderfully!

I did just shove the turkey im fridge to keep it cold, will do just that, slice and eat and move on. I spend yesterday boiling potatoes, as I just wasnt sure about the texture of baked in the casserole. Hope everyone has a good day.
