So I planted potatoes for the first time. I've harvested some yellow potatoes as new potatoes, but am wondering if you can harvest and eat russet potatoes as baby potatoes ? I cannot find an answer anywhere on baby russets. Thank you so much !
If they are there , no reason not to.
I do not know where you are at , but next year , if I were you , I would call up the Maine Potato Lady and tell her what you want, and then ask what are best.
I do not work for her, and live over a thousand miles away but have spoken to her and she was very pleasant to speak to
Yes you can use russets as "new" potatoes. Most russets are long season varieties, so many folks will grow quick maturing varieties for "new" potatoes as they want them early in the summer.

Thank you very much! I just ended up getting a little to antsy and harvested too early. I actually thought I had more of the yellow variety planted, and I like those ones a little smaller. I still have some other varieties growing, so I'll be more patient.
