Plumerias
I live on Long Island, NY and obviously can't keep my plumies outside all year. In past years I have brought them inside and kept a 12 hour grow light on them throughout winter with success. This year I can't do that as my daughter was born this summer, and he room is the room I used to use for this, and my general propagation.

So this year I will be overwintering them in my garage. I have read about it, but want to be clear. I have 2 plumies about 3' high. Should I take them out of their pots now, with leaves, and just put them in a bag in my garage until spring? Do I do anything else like remove the leaves?

If you have space in the garage for them, just let them overwinter in the garage. Temps should not drop below freezing (32F) in the garage or wherever else you decide to store them (inside, greenhouse, dark closet, etc). The leaves drop off on their own. They do not require sunlight, grow lights or hardly any water (unless located near heat or air vents) when they are dormant (meaning when they have no foliage).
