I grew an Avocado seed into a sapling and potted it! (location: Austin, TX)

How long does a sapling take before it starts producing fruit??

Very cool! I got a couple to root in water also. I found that adding a few rocks I had picked up on the beach (I live near the coast, but I assume any rocks would do as long as they don't have chemicals on them) to the jar made the roots go crazy. This has worked on a lot of different plants I have rooted in water. I think they like the minerals from the different types of rocks (bits of quarzite, granite, slate, pumice, marble etc.).
