Are you asking about lettuce that is growing in ground or a head of lettuce that you purchased and ate the leafy portion?

I grow lettuce in ground and will remove the larger lettuce leaves around the perimeter of the plant. The plant will keep growing.

To thin the lettuce, I will pull up plants that are too close together. I have noticed that when I cut the leaves and throw the roots on the compost, the plants will start growing more leaves.

I have never tried to grow the core from a store purchased head of lettuce.

I have never tried growing it, because I don't think you can expect much better.

Maybe you can find the hydroponic lettuce in the plastic case, that comes with roots on. Maybe a little more hopeful.
Plant it and they will come.

Proper lettuce (Lactuca sativa) is a member of the Compositae family: to cut a very long story short due to how this family of plants evolved to cope with the cold season they are poorly suited to be propagated from cuttings, which is what you are trying to do. On top of this head lettuce has not been selected to easily resprout after the first cut.
The cuttings die out after 10 days through a combination of hydration issues and, much more critically, lack of energy to fuel their growth.

I suggest you start growing leaf or romaine lettuce from seed: under the proper growing conditions you can get three cuts from a plant before it's spent. Head lettuce can sometimes regrow after the first cut but it's usually not worth the hassle.
