Garden Ideas: Level 1
Well, on the internet, it says that Aeonium 'Big Bang' is a variegated plant. From my understanding Variegated plants have parts of their leaves with no chlorophyll.

Aeonium 'Big Bang' seem to be a plant with certain spots of its leaves that lack Anthocyanins. It doesn't seem like variegation

Can anyone shed any light on this?

It fits the (botanical) dictionary definition of variegation. As you have observed, the color that is lost is purple, not green. So presumably it's not a defect in chloroplasts or chlorophyll, but something else at play.

Variegation is not limited to not having chlorophyll. Variegation can actually be from not a genetic mutation, ie scindapsus pictus

Kew Plant Glossary says

variegated - (of leaves) irregularly colored with two or more colors

And any leaf that has stripes, spots, splotches, or other irregular patterning with more than one distinct color would qualify.

Ok, so it is a variegate. Its just not a chlorophyll lacking variegate, but a Anthocyanin lacking variegate.

Chlorophyllic variegation (I think that's the word?) is just one of many. Some are mutations in genetics, others aren't.
