I've followed the Land Institute for quite a few years. Always "about to break out," but never quite getting there.
The problems with any new crop are:
What are the yields and what will prices be? (if not enough to make a profit, the quality of the product doesn't matter)
What infrastructure is there to handle the product? (grain does have the advantage that if there is a market, the local elevator could always devote a silo to storage, even though there would be inevitable adjustments needed)
Is this a product with mass market appeal, or are buyers going to come from a limited group of enthusiasts?
I would try Kernza products out of sheer curiosity. But would probably stick mostly with the tried and true grains that I know and whose taste I enjoy.
