What if I never harvest my shallots/multiplier onions?

Central Texas, zone 8b, heavy clay.
I'm thinking of growing shallots, and I was wondering: what if instead of harvesting some of them, I just left them in the ground for years and years? Would they multiply, or just rot?

Based on my experience they multiply. I've got a corner of a raised bed full of onions after I let one go to seed years ago.
