Bonsai updates are much less frequent than other kinds of cultivation, although specimens might be groomed as often as weekly, at times. The goals are in terms of years, not weeks or months. Jades are one of my fav plants in this category. They grow pretty fast, young branches are flexible, and new branches usually thicken well in proportion to the older ones.
Also love Scheffleras for the tiny leaflets.
Coleus are harder to keep alive long-term but grow so quickly they are excellent practice plants. Within one summer, you can do experiments on several plants and observe the various responses. Unpruned, removed tip only, removed all lower leaves but left the tip alone, cut in half, and learn a lot about the pruning of oppositely branched plants in particular.
Bonsai plants can seem stagnant, but in the realm of bonsai, that's an accomplishment, not a fail. So updates might say, "and it doesn't look any different than it did 5 yrs ago." LOL!
