How tall can they grow in Maryland?
Do the leaves die off in winter and come back in spring?

Not living in Maryland, I have no idea. But yes you would lose leaves in freezes

They would freeze, coming back, not sure, you probably need to overwinter the bulbs. I know @sallyg grows some in Maryland, she might be able to give you some advice.

If you know the botanical name, you can find hardiness info. Several kinds of plants share the nickname, elephant ears.
