I always grow heirlooms and save most of my seed. But every year I like to try a few new things. One of the new things I tried this year was burdock. The seed company described it as being a fairly common vegetable in parts of Europe and a favorite in Asia and it has a nice and nutty flavor.
As always I'm really late planting my fall garden. I've gotten all of my root crops in and most of my brassicas but I still have more to go and I need this bed. I'm digging them up today but I harvested one last week and just simmered it in a little water by itself to see what it tasted like. It didn't taste like any nut I have ever eaten before! I imagine the roots of my Juniper trees probably taste like this!
So I looked for recipes online and they all add lots and lots of extra stuff to each dish. Mostly sesame oil and soy sauce and ginger and garlic and chilis and oyster sauce and fish sauce etc. Sounds like they add so much stuff to it because it's not so tasty! Do any of you have a simple but good recipe that doesn't use a dozen ingredients? I would appreciate hearing from you. It looks like I'll have a lot of burdock to cook.
