Don't know with delicata...
This summer I saw some colouring on the striped cushaw, which when I went to collect turned out to be rotting. Good for chickens, but unappetizing to me.
Nothing like cutting them open to see...

How do you know when delicata squash goes bad?
You'll know delicata squash has gone bad if it has wrinkles or soft spots.
