Measuring Fresh Herbs for Cooking

When using fresh herbs in a recipe that calls for dried, the general rule of thumb is that 1 Tablespoon of fresh herbs equals about 1 tsp. of dried herbs. The herbs lose about 2/3 of their bulk when they are dried.

I once took a salady thing to a potluck. It called for fresh parsley, which I had forgotten to get home (30 minutes from the grocery store), so I used dry..... IN THE AMOUNT CALLED FOR FOR FRESH!!!
And I didn't taste it before I took it.
