I want to know when I can pick my delicata squash. Suggestions?

We check Delicata squash for maturity in early September. Perhaps a bit later in your zone. This squash has thin, tender skin, which means that you need to harvest it before the first frost.

We had a vendor selling it in July. I don't know when he started it and we are in GA, soI don't know how to tell, but I am interested because I bought seeds for next year because we liked it so much!

91 to 100 days to maturity.

If you try to dent the skin with your fingernail and it resists or seems hard, the fruit is ripe. Determining ripeness in Delicatas is a bit more challenging than other types like Butternuts or Acorns though, because the skin of Delicatas relatively thin, so it's often more difficult to determine what "hard" skin feels like.

If in doubt, you can always wait a few more days. In general, they won't spoil unless they've been damaged or they get frozen.

Ditto what Kent said. You can also just watch the vine they are growing on and when it begins to wither it's a good sign the squash won't gain in size anymore and is hardening up. When you clip it leave about an inch of vine attached rather than just pull the squash from it, exposing an open "belly button". This will help it cure better, and letting it cure a bit will actually sweeten it up quite a bit more than just picking and eating.
