Oh I know. This was the neighbor that was extra upset when I didn't plant eggplants last season. Really upset. So now I have plenty of eggplant.

I didn't have anywhere to put them and didn't want to have them in the pots again. You really have to water those pots constantly. Eggplant fruit gets bitter if only even once the plant dries out.

So last Fall I planned ahead and moved daylilies out of the terraces garden here by my kitchen door. Now it is eggplants with a trellis of pole beans in the back.

As beautiful as it was in the daylilies, I am really pleased with the way it is now. And I still have the daylilies only they are moved elsewhere.

I would grow lots of eggplant for that neighbor! Hate making eggplant parm, but love eating it....such a nice presentation, too!

She is a wonderful person and just a fabulous cook. She has already told me she will make more Eggplant parm as soon as there are more eggplants.

Lucky you! Right now I'm making 'green' soup....beans, zucchini, onions, garlic, celery, & tomatoes.....curry powder, too, all simmering in a veggie broth.....When tender, I'll puree with a little half & half......

Birds Daylilies Dog Lover Garden Art Heucheras
A friend sent this recipe...in a large shallow dish, layer sliced Zucchini, followed by sliced onions, followed by sliced tomatoes...sprinkle with minced herbs of choice....layer any kind of cheese slices, followed by strips of uncooked bacon.....bake at 350 for a half hour....will definitely try it!
