Every couple of days, my dad would "bury the garbage" in the veg garden. My mom kept a big empty coffee can in the kitchen sink to catch peelings, coffee grounds, egg shells, etc. When it was 1/2 full, dad would take it out, dig a hole in the veg garden and bury it. He had the best garden in the neighborhood. We'd call it "composting in place" now. In the late fall, before ground froze, he'd open a shallow trench through the garden beds and over the winter he'd "bury the garbage" in that.
I am not "country" I am "landed gentry."
