Harvesting in Autumn: Storing for Winter

My memories of the years when I was a young lad are full of scenes relating to autumn harvests of staple foods from the fields and gardens. It was considered wasteful, even sinful, back then not to plan ahead and prepare for the coming winter months. This activity began in the mid-summer months, but it accelerated rapidly as we moved into late summer and early fall.

I have a small bed of sweeties to harvest in the next few days. Do I lay them out the same as the Irish potatoes, and let them dry? Confused

I've been reading all sorts of instructions on "curing" them in high humidity conditions that I don't readily have available. Laying them out would be perfect for me -- except -- do squirrels eat sweet potatoes laying out in the garden bed? Confused

They're digging up every bed that's not covered, right now, burying nuts. Don't wanna give them a free meal of sweeties, too!!!

You've asked a question that I know very little about. Although I love them, I have never grown them. So I must disqualify myself right here. *Blush* I will leave this open to others who might see this question. Meanwhile I've run across a couple links that look very promising. Hope this helps!
