After @drdawg worked through the issue with me, it turns out that my fig was severely root bound and was literally dying of thirst (all the roots were around the edge of the pot and the water would run straight through). After repotting it and leaving it by a window that doesn't get direct sunlight, this is how it looks now.
Super shiny leaves, lots of new growth and a happy plant.

I just re-found this thread whilst helping a friend - I thought I would post that 3 years later... the fig(s) look like this and the smaller one is a cutting of the same that's is now 5 foot tall in its own right.
The repotting and the terracotta pot really did the trick, so thanks for the support!
For those newer to fig keeping and wondering,
- Its in a (probably too large) terracotta pot - see my earlier posts for the journey there
- I give it a full watering can or two of water every 2-3 weeks when the leaves start to droop, I remember and the soil is bone dry - enough to fully soak the soil. It gets pretty neglected
- I give it a mild fertilizer once in a blue moon (like once a year) when I remember.
- It gets direct sunlight for about 3 hrs of the day and doesn't seem to care. Also, as Willc said, in a house with limited windows, it's almost impossible for me to give it too much light...
- It's on the other side of the room from an air-conditioning/heating vent, so no drafts.
