I would defer to Thijs' expertise on this subject. The big cactus with the white fuzz in the original picture does look like a Parodia, but I am almost completely useless when it comes to distinguishing Echinopsis species (or for that matter knowing what makes an Echinopsis different from a few other genera).
The lower right plant in the second picture looks like an Echinopsis but I couldn't tell you much more.
As a matter related to signage, these plants are long enough lived that they sometimes wander from the original name tag (growing sideways for example), or the name tag wanders from them... or the plant dies without anybody noticing or thinking to pull the tag. I have seen all of the above in botanical gardens, and I'm sympathetic to the task of keeping identifying name tags continually up to date. Then again sometimes the puzzle of figuring out what forensically what happened can be entertaining in itself.
