Just ran across this today in my email feed - maybe they also know it is cabbage day. Looks easy:

Cabbage Roll Chicken Enchiladas (from "Eating Well")

12 savoy cabbage leaves
2.5 C shredded cooked chicken
15 oz spicy refried beans
1 3/4 C shredded Mexican cheese
10 oz red enchilada sauce
Cilantro

Preheat oven to 350
Bring large pot of water to boil, add cabbage leaves and cook 1 minute. Drain and rinse, pat dry.
Combine chicken, beans and 3/4 C cheese in a bowl.
Coat bottom of 9x13 pan with a bit of the enchilada sauce.
Fill each leaf with about 1/3 C chicken mix, roll up, place seam-side down in dish.
Drizzle remainder of sauce over, sprinkle with remainder of cheese
Bake 20 minutes
Garnish with chopped cilantro
I want to live in a world where the chicken can cross the road without its motives being questioned.
