I think these may be the same.

Knautia (Knautia macedonica 'Melton Pastels')

I think that because of this -

'Knautia macedonica 'Melton Pastels'
Macedonian scabious. Also marketed as 'Watercolours' ...

Though the spelling is an Engish version of Watercolors.

Nothing that's been done can ever be changed.

They do look like the same color shades but how do we figure out if they are truly two different cultivars, or one and the same?

I think they're the same. There was nothing going on in the Watercolours entry (no one owned it or had added any photos or growing data), so I deleted it and added it to the Melton Pastels entry as an also-sold-as name.
