I'm in Tampa Bay, close to the Gulf of Mexico and grow orchids outdoors. Last nite the temperature went down to 40 and I neglected to protect Vanda and Dendrobium Nobile. Will they die from an overnight and early a.m. temperature

Probably not.
Dendrobium nobile actually flowers after a period of cooler night temperatures. One night of cool won't hurt the Vanda. If it went through a week or ten days worth of low 40's, that might be a small issue.
